Sometimes, the best parts from juicing are the left-overs. Save carrot remains and put them into your spaghetti sauce, stew, or pizza. This adds beta-carotene and vitamin A. To maintain nutritional value, add all these extras as the food cools, since heat can eliminate some nutrients. You're reducing food waste and getting those hard to get vegetable servings in. If you don't have a juicer, then try the food-processor.
